Hawaiian Un-Chicken

My grandmother passed when I was around 12 years old.  Most of my best memories surrounding her are those when I would help her make dinner when my brother and I would be visiting her.  My grandmother was a fantastic cook, and I still feel like she’s with us every time I make one of her recipes.

Her Hawaiian Chicken was a mainstay in my family.  Everyone loves it.  When I started working for my family’s business around 6 years ago, I made the dish for our annual Christmas Eve “linner” (lunch/dinner) and it was a huge hit, especially with my family who still works for the company.  Soon after that everyone expected me to then make it.  One year I remember I made a chili instead and I never heard the end of it.

This year was my first year as a vegan, and therefore a dilemma.  I don’t want to even touch meat anymore… gross.  So I decided to play the biggest practical joke ever by figuring out how to veganize my grandmother’s Hawaiian Chicken recipe and not telling anyone it was vegan.  Best… test… ever!

Long story short, the dish looked so convincing that when I piled my plate full of it the day of the linner, everyone started running around the office announcing I was a bad vegan and “cheating” by eating chicken.  As they ate the dish, there were lots of  “Yum!  I look forward to this every year Corrie, delicious!” comments.  I laughed inside.  After everyone had eaten almost all of the tray I announced to the group it was vegan, to which my father in particular announced it was not possible, that it had to be chicken!  It tasted like chicken and therefore had to be!

That, my friends is a successful recipe veganization!

Here’s the recipe in case you want to test it out on your non-vegan friends.  I must warn you its not healthy but damn it’s delicious.  It works great as a potluck recipe and serves around 6 meal size servings or 8-10 small “potluck” size portions.

Hawaiian Un-Chicken

  • 3 pounds of vegan unbreaded chicken tenders/nuggets.  I used Gardein buffalo strips minus the sauce.  Be sure they are defrosted otherwise the breading won’t stick.
  • Italian Breadcrumbs (weird, but works.  It’s gotta be Italian Herb.  Some aren’t vegan, so be sure to check the package.  In the event you can’t find any, use plain and add your own dried italian herbs along with some soy parmesan)
  • Canola/Vegetable Oil to Fry
  • 2 jars Saucy Susan brand Duck Sauce (it HAS to be Saucy Susan, so said my Grandma)
  • 2 large cans pineapple junks in juice
  1. In a large, deep sided frying pan bring several cups of frying oil to temperature.  While that’s warming to temperature, work on breading the chicken.
  2. Cut each mock chicken tender into two pieces so you have little “chunks” of chicken.  Place into a large bowl.
  3. Open one of the Saucy Susan jars and spoon several tablespoons over the chicken chunks.  Mix well to coat.
  4. In a large ziplock bag, pour a good amount of breadcrumbs.  Then in batches dump your chicken chunks into the breadcrumbs, close the bag, toss to coat, and fry until golden and crispy.  Remove from oil and drain on paper towels.  Repeat until all the chicken chunks are fried and drained.  Then arrange all the fried chicken chunks in a large baking dish. 
  5. Strain the pineapple juice into a large bowl, reserving the chunks of pineapple.  Then add to the bowl both jars of Saucy Susan, and whisk to mix.
  6. Combine the pineapple chunks in the baking dish with the fried chicken pieces.  Pour the pineapple sauce mixture over the top, and toss to coat.
  7. Bake uncovered for 20 minutes until heated through and the saucy is thick and bubbly.
  8. Plate the Hawaiian Un-Chicken with some rice and prepare to fake out your non-veg friends.

December in Denver

So I had a business trip to Denver I had to go on and along with it all my outfits had to fit into this 30 for 30 challenge.  Packing for it was probably the easiest out of any trip I’ve ever packed for being my options were so limited.  All in all, here’s what I came up with.  I had two days in a boardroom at the companies corporate office along with a casual dinner and bowling evening.

I Wanna Stay in My Jammies!

Last night when I had gotten home from the holiday party I realized all my pajama’s were at the laundromat for wash and fold service.  So I raided my husbands PJ’s and my god they are the most comfortable PJ’s ever.  Way jealous.

This morning I woke up a wee bit hung over and tired and had no desire to get out of these fabulous jammies.  But alas, my laundry was waiting down the street at the laundromat to be picked up and I needed to pick up a few small items at the grocery store next store to make lunch, so I had to go outside.  Since I’m such a dedicated individual, instead of keeping the jammies on (which I usually have no qualms doing) I threw on some of my 30 for 30 items, ran my two quick errands, came home and promptly got back in the jammies.

I’m resting up because I have a 3 day business trip out to Denver this week.  And that reminds me I still have to pack.  This 30 for 30 thing should be interesting to see what I come up with that’s appropriate for the trip.

Holiday Par-tay!

Last night was my company’s annual holiday party.  We all had cocktails, awesome Italian food and great conversation for once not involving business.  I had a lot of fun but got home crazy late and pretty buzzed which therefore screwed up my plans for today.  Oh well.

I love Friday’s because I can be casual and cozy at the office.  I love this sweater for that reason, it’s tres cozy.  You know what else rocks?  Having taken this past Wednesday off.  The whole “2 days working, one day off, two days working… WEEKEND!” concept is pretty awesome.  I need to take more Wednesday’s off.

Lunch Meeting

At work today I was running behind on my workload and trying to get a kazillion things done.  When it was almost time for my lunch break I drove a co-worker to Subway to pick up sandwiches for the office and got a reminder on my iPhone that I had a freaking lunch meeting today.  And the lunch meeting was to start in 10 minutes.  Ooops!  There’s no better way to waste most of your work day than at a lunch meeting.

The Roast

Today was the best day to start off the 30 for 30 challenge.

My hubby had scored tickets to the Friar’s Roast of Quentin Tarantino a while ago and today was finally the day of the big event.  I took the day off from work and we donned our “business casual” best and got our buts on over to the Mid-Town Hilton just in time to do some serious people watching prior to the event.

At our table we had some casual conversations with our table mates, and then we recognized the voice of one of them to be Jackie “The Jokeman” Martling (who was really cool).  We enjoyed a nice luncheon, including a delicious vegan pasta primavera while the celebrities at the event “roasted” Quentin.  As you can imagine there were a many a joke on Uma Thurman being his “muse” and his foot fetish.

After the event wrapped up, while waiting on line to grab my coat at the coat check, Harvey Kietel was spotted behind me.  The hubby managed to snap a photo just in time before he walked off.  Other celebs we spotted outside the event included Whitney Cummings, Kathy Griffin, Steve Buscemi and Richard Beltzer.

After grabbing our coats and our gift bags, we sat at the hotel bar and I ordered the worst cocktail I’ve ever had.  Seriously, grossest ever.  Looks in the photo below are deceiving, it was vile. 

All this and I was still home before 5 pm.  It was a great break in my normal workday routine and not an opportunity I’ll probably get again.  Unless somewhere out there wants to invite me to the next roast, which I doubt.

December 30 for 30

So November was pretty much a “nothing” month for me.  I did do much at all, blogging included because I was busy resting to cure my fatigue.  Good news is after what seems to be a gazillion doctors appointments, the source of my fatigue was a simple virus and over the past several weeks I’ve been feeling more and more like myself.  Now that I’m pretty much back up to speed, it’s time to get on with my life again.

I’ve been loving what Kendi and the other bloggers have been doing with the 30 for 30 remix challenge.  In the spirit of not spending anything on myself and instead spending everything on my loved ones for the holidays, I’ve decided I’m going to take on this challenge and remix what I’ve got in my wardrobe for the month of December.  Okay not the entire month only until December 30th, it’s supposed to be a 30 day challenge.  That way I can still live it up for New Years Eve.   

My best friend has also agreed to take this journey with me so it should be interesting.  I’m expecting it to really be a challenge.  I’ve got a smattering of holiday parties, a rescheduled “celebrity” event, as well as 3-5 days of work travel all scheduled into this month.

The rules are pretty simple.  I can choose 30 items out of my closet.  Shoes unfortunately count into the mix.  Luckily, accessories and coats do not.  Using these 30 items I have to come up with 30 outfits and document them along the way.
